Gluten-free Honey Cake


I don't have time to chat. I just made some honey cake in honor of Rosh Hashanah. It's quick and easy, so I wanted to share it.



Gluten-free Honey Cake
Dry ingredients:
3 c. brown rice flour
1 c. millet flour
1 c. sugar
6 tsp. Baking powder
1 tsp. Baking soda
2 tsp. Guar gum
1 tsp. cinnamon

Moist ingredients:
2 Tbs. Smart Balance Light
2 eggs
1 c. strong black coffee


Mix all the dry ingredient together.
Add the moist ingredients.
Mix well.
Preheat oven to 325°
Grease 2 9x9 cake pans
Pour in batter and let rise in cake pans until the oven is ready.
Bake for 55 minutes.

  2. I'm confused. I have found lots of recipes for coffee cake which do not contain coffee. Now here's a recipe for honey cake which doesn't contain honey (but does contain coffee). This makes no sense to me at all.

    Having said that, I will definitely try this recipe, because it is something I had given up looking for - a cake flavored with coffee.

  3. Coffee Cake is a cake you serve with coffee. It is firmer than a birthday cake. It is almost a bread.

    It sounds like you are looking for cakes flavored with coffee or with a coffee flavor. Our long time family favorite is Black Magic cake. My copy of the recipe is in a cook-booklet I got from Hersey Chocolate. Check their website. You'll have to convert it of course.

    For a coffee flavored cake I would consider trying a plain cake and substitute whatever liquid it calls for for some very strong coffee and/or coffee extract.

  5. The Honey cake was still good, even though it was firm...And,might add, it's best with milk on top!
